INGREDIENTS 500g cod fillets 100g breadcrumbs 2 eggs 40g grated Parmesan cheese 1 garlic clove 2 tbsp parsley 60g flour 100g breadcrumbs ½ tsp salt ⅓ tsp pepper METHOD 1. Pat the cod dry with paper towels, then cut it into pieces. 2. Place it in a bowl, add breadcrumbs, eggs, Parmesan cheese, chopped parsley, a clove of garlic, salt, and pepper. 3. Mix with a fork to combine the ingredients uniformly. 4. Form into balls and set aside. 5. Meanwhile, on a plate, combine flour and breadcrumbs. Roll the balls in the dry ingredients to fully coat them. 6. Heat plenty of oil in a pan and fry the balls until golden brown. 7. Serve them hot to enjoy them at their best.
